Locals may tell you the best places to buy cheese in Paris are at a Fromagerie (a cheese store) or an Affineur (someone who ages cheese). And, there are several factors to consider when selecting cheese: 


1) Variety: There is a diverse range of cheeses available, including soft, hard, blue-veined, washed-rind, and aged cheeses, among others. 

2) Aged vs. Fresh: Decide whether you prefer young, fresh cheeses or well-aged ones. Aged cheeses typically have a more complex flavor profile, while fresh cheeses are often milder and creamier. Parisian cheese shops usually offer a range of both options, so you can explore and find your preference. 

3) Seasonality: Some cheeses are seasonal, meaning their taste and quality vary depending on the time of year. Certain cheeses are only produced during specific seasons, and they may be at their best during those times. Consider asking the cheesemonger about seasonal cheeses and their availability. 

4) Authenticity: Look for authentic, traditional cheeses that are made using traditional methods and recipes. These products come with an AOC label.

5) Pairings: Think about how you plan to enjoy the cheese. Consider whether you want a cheese that pairs well with wine, bread, fruits, etc. The cheesemonger can provide recommendations on suitable pairings based on the flavors and characteristics of the cheese.
